Trained in the discipline of fine dining, Yanis has made precision and plating his signature. YAX Events was created around a singular belief: that unforgettable events engage the eye just as profoundly as they delight the palate.
He started YAX Events with a narrow idea of what a kitchen is responsible for. Not just what a guest eats, but what they notice first. A plate set down with intention can taste different even when the recipe underneath is identical. That gap is where he spends most of his time, and it is the reason every YAX menu is composed close to the event itself.
That instinct comes from four years training at École Vasseur in Paris, followed by time on the line at Maison Solstice, a small fine-dining kitchen known for its restraint as much as its ambition. Knife work, sauce work, the basics repeated until they stop requiring thought: the kind of foundation that only comes from time in professional kitchens. It is still the backbone of how the kitchen runs today, even on menus that look nothing like where he started.

These days that means no standing menu to fall back on. Every event is built from a blank page: produce sourced the morning it is used, every dish tasted by Yanis personally before anyone else sees it, and a kitchen that follows him on-site from the first course to the last. That takes longer than working from a fixed catalogue, and that pace is exactly what keeps every plate considered.

Off the pass, he is less precious about all of it than the plates might suggest. Ask him about the best part of a corporate brunch and he won't mention the food. He'll mention watching someone go back for a second helping without being asked. Hospitality, the way Yanis practices it, is mostly about noticing things nobody asked him to notice, and doing something about it before they have to.

He still tastes every dish that leaves his kitchen. Twice, always: once while it is coming together, once after it is plated. That has stayed constant since the first event YAX ever ran, back when it was just him and a borrowed kitchen, and it holds just as true now that the events are bigger and the kitchens are his own.
Most days, you will still find him at the pass rather than in an office. That is on purpose.
